Parmigiano Reggiano is a hard DOP cheese, made with raw cow’s milk, partially skimmed by surfacing, without the addition of additives.
The production area includes the provinces of Reggio Emilia, Modena, Parma and Bologna to the left of the Rhine river and Mantua to the right of the Po river.
With 3.8 million wheels, it is the third Italian cheese for production after Grana Padano and Gorgonzola.
Its production is regulated by strict rules and controlled by the Consortium for the protection of Parmigiano Reggiano PDO: Every single wheel is carefully checked and only suitable ones can be called Parmigiano Reggiano and have the marks on the wheel that identify it as a PDO product.
