Grana Padano is a hard, cooked and slow maturing Italian PDO cheese. It is produced in thirty-two provinces of Emilia-Romagna, Lombardy, Piedmont, Veneto and Trentino-Alto Adige, where it assumes the name of Trentingrana, limited to the autonomous province of Trento.
Its quality is controlled and regulated by the Consortium for the Protection of Grana Padano PDO, which is why all stages of the production chain (breeding and milking of cows, collection and transformation of milk into cheese, maturing, possible grating) must necessarily take place in the area of origin. Every single wheel is carefully checked and only suitable ones can be called Grana Padano and bear the marks that identify it as a PDO product.
